[GALBIS RESTAURANT] FUSILLI SALAD WITH KING PRAWN TAILS
INGREDIENTS
250 g Gallo Tricolour Fusilli
100 g watercress
100 g lamb's lettuce
150 g diced Emmental and semi
cured cheese
100 g diced fresh tomato
125 g tuna
150 g elvers
150 g boiled king prawn tails
12 quail's eggs
50 g stoned black olives
a couple of hard
boiled hen's eggs
olive oil
balsamic vinegar
tarragon
ground black pepper
salt
METHOD
Boil the Fusilli in a cooking pot with water, a little olive oil, butter and salt. Once cooked, allow to cool down. Once cool, place in a salad bowl and begin to add the remaining ingredients: the tuna, the watercress, the lamb's lettuce, the diced tomato and cheeses, the elvers, the king prawn tails and the grated hard-boiled eggs. Set aside some of the tails to garnish the salad. Once everything is in the salad bowl. stir well and garnish with the black olives cut into halves, the prawn tails and the hard-boiled quail's eggs. Now pour over the dressing made separately in a sauce boat with 3 soup spoons of oil, a teaspoon of balsamic vinegar, a coffee spoon of tarragon, and salt and black pepper to taste. Mix everything well and dress the salad. And now it is ready to serve. This is a perfect salad to have as a meal in itself as part of a balanced diet which helps look after your figure and which combines all the vitamins, proteins and carbohydrates in the right quantities for the ideal shape.
