BALANCE AND FLAVOUR
Today, the Mediterranean Diet is considered to be part of the heritage of the cultural world. Rich and varied, it offers a selection of flavours to which it is easy to become addicted. The base is carbohydrates, whose daily contribution guarantees the right dose of nutrients and energy for an optimum performance, both physical as well as intellectual. Between them, bread, rice, cereals and of course, pasta, are essential. Pulses, fruits and vegetables also occupy a place of honour, together with more moderate portions of cheese and yoghurt. The proteins of animal origin are more limited, preferring those provided by blue fish, eggs and chicken to those of red meats.
